Balsamic Vinegar of Modena Due Vittorie Oro 1

Freshwater Amazon fish 1

Brazilian mashed potato 1

Olive Oil 1

Cinnamon 1

Cut the fish into small pieces, add a little cinnamon and salt and cook it in a non-stick pan with a little olive oil.

Cook over high heat, gradually lower it and finish cooking in the oven.

Prepare a velvety puree with the Brazilian potato and serve it.

Add a cold emulsion of oil and Balsamic Vinegar and then the golden fish.

Finish with a final drop of Balsamic Vinegar emulsion on the fish.
